The superior rhum agricole blanc from Martinique is the result of meticulous attention to detail from the selection of the sugar cane through cultivation, cutting the cane at maturity and getting that freshly cut cane from the fields and into the cane mill and subequent juice into the fermentaion vats in less than a few hours. Fermentation takes place in stainless steel tanks with a proprietary yeast strain cultivated from natural yeast strains propagated in France by a champagne yeast maker. Gregory Neisson, grandson of the founder, monitors every drop of this rhum as it is distilled to about 72% ABV in the modified Savalle still. From the aroma through the body and finish, fresh sugar cane is evident as it should be and belies the 100 proof alcohol content of this fine spirit.
This is also the base spirit for all of the other rhums that are aged and bottled here on the northwest side of Martinique.
