I learned to make a rum punch in Trinidad similar to robercw's but my measures go like this:

1 Sweet - 250 ml sugar water or simple syrup
2 Sour - 500 ml fresh lime juice
3 Strong - 750 ml rum
4 Weak - Lots of Ice

When all are combined add Grenadine for color, a dash of Agnostura bitters and a pinch of nutmeg. Without the ice it fills two 750 ml bottles and keeps well without refrigeration. It also makes a nice marinade for chicken or fish.

Default cocktails

While in Las Vegas last weekend I had the pleasure of partaking in several fine beverages...

At the Bellagio I had the finest Mojito I have ever tasted. It was made with 10 cane and Cruzan Lemon, muddled with the usual mint, but with the addition of a little pineapple peices (muddled). I have not had the chance to try the 10 cane or Cruzan before, but they were both fabulous in this drink.

Another place I had a drink made with 10 cane and cherry brandy, which was excellent. I suppose I should have asked how they make it...but isnt it always better when someone else makes you a drink?

That Mojito sounds nice..i like the idea with muddled pineapple pieces.
Muddled baked pineapple Mai Tai is also nice, a friend told me how to do it. Use TVґs or Beachbum Berrys recipes for Mai Tai.
Bake some pineapple with some JW&N overproof rum in a frying pan and muddle it in the glass and then make the Mai Tai.

Why not try to make your own? i cannot find any Falernum here either..so i make my own. In fact, i have never even tried any commercial falernum to compare with homemade ..i only had it in drinks at the Tiki Room, but i just bet the home made is better.

Hmm...I know just the place to find 6 oz of Wray & Nephew, maybe I'll give this recipe a try this weekend...

A while ago I BS'ed falernum by reducing Reed's ginger ale in half, an mixing 1:1 with sugar. I also used Gosling's overproof (it was the only dark rum my buddy had), and mixed it about 3:1 with Bacardi "Superior." The two of us who had ever had a rum swizzle thought it was quite decent. The other two were less impressed. There was a bitterness on the end, which I think came from using calcium enriched orange juice, and it did not have bitters, which would have helped a lot. C'est le vive.

For the falernum, I agree it is harder to find than Santa Claus. I have a bottle I ordered from a store in the States in December but did not open until now. It looked much different than bottles I have brought home from Bermuda so I did not try right away. The one I just got was made by Fee Brothers. Just decided to make a Rum Swizzle with it instead of the grenadine. The Fee Brothers smells good but I no longer have the other brand to do a taste test. I will however say that I much prefer the version I make using grenadine. The grenadine I now use is made by Stirrings - OUTSTANDING. The only one I have come across that is made using real pomegranate juice. Not sure I will order another bottle of the Fee Brothers.

Home made might be good... might give it a try.

Almost done the drink writing this message - guess I need another....

I have never tried Fee brothers but from what i`ve read its not the best..?

I think you are right Tiare. I think Fee Brothers tries to do everything so all the products are just OK.

Not sure if you can get Stirrings products in your part of the world. They have a line of cocktail mixers that I have not tried but the bar ingredients line is very good. As mentioned, the authentic grenadine is amazing. I just bought a bottle of their take on orange bitters. Called "blood orange bitters". Just tried it in a drink and liked it. They have a few other things I must try.

Feel free to add your recipes to the recipe database. You have to be logged in to add recipes but then they will be easier to find and enjoy.
