Bars that appreciate RUM

A growing number of bars appreciate rum, and and we appreciate them.

Default Noble Experiment, San Diego


I had the pleasure of visiting the Noble Experiment down in San Diego. It's a seriously fantastic bar with an acute appreciation of all spirits (Especially Rum). Nathan Stanton is the owner and resident mixologist, and also owner of El Dorado bar up the street . The decor is eccentric, but fantastic, and the menu is simple and straightforward.

It doesn't exist.

I mean really, you go to the address and it's not there. I won't ruin the surprise, but ask the locals and you'll find your way in. Best bar in San Diego? Unquestionably. Best bar I've ever seen? Quite possibly.

Seriously, you have to wonder what they were thinking when they were putting this bar together. The decor is crazy, but in a good way. The bar is well stocked, but that's not doing it justice. The bartenders who work there are masters of their craft.

We walked in, and were seated after a short wait (Reservations are must!). We sat on the cushions and the Bartender walked out from behind the bar to greet us. He crouched down next to us and introduced himself. He said Nate was his name, and having done my research I knew he was the owner, and I was pretty surprised to see him working behind the bar. We exchanged pleasantries and discussed the craft, and then he asked me what my favorite spirit was. I said rum, and he asked me what my favorite rum was. El Dorado 15 of course . He turned around and over his shoulder he said he knew what to make for me.

I've been to a few bars in my time, but I've yet to see anyone prepare drinks in the manner Nate does. They cut their own ice, they use only the finest ingredients, and their bartending is Calculus. I mean they use a single block of ice to control the dilution of the alcohol during mixing and shaking.

Our drinks:

Zacapa 23 Manhattan
Leaving Tijuana
Dark and Stormy

I'll do these in reverse order .

Dark 'n Stormy:

At The Noble Experiment, they use ginger juice (not ginger beer as is normally called for) to flavor their Dark 'n Stormy's. This changes the flavor a lot, specifically making the ginger bite very hard. It makes a very tasty cocktail, and the presentation was spectacular. The drink was cooled with a single block of ice which held our cocktail at the right temperature all the way through. Delicious.

Leaving Tijuana:

Basically a Margarita with smoked salt, although calling anything basic in this bar is almost a travesty. The complex flavor of the tequila struck a chord with the smoked salt, almost like a memory. A tasty drink indeed.

Zacapa 23 Manhattan:

I was speechless when I tried this drink. Zacapa 23 is a fantastic aged rum that I've only ever sipped neat. I certainly never thought about making it into a Manhattan, but my world view changed after I tried this drink. The flavor was extremely complicated and delicious. I have to say that this was the best drink I've ever had, hands down. The sweet vermouth and the real maraschino cherry in the glass intensified the flavors of the rum, which are already incredible. As I was sipping my drink, the hostess came by and asked me what I was having. I told her and offered her a taste. She took a sip and looked me dead in the eye and said "That is the drink of Kings". Agreed.

I can't say enough about this bar. If I could take a star away from every other review I've made to make this one stand out just a little more, I would. It's really that good.

I wish the folks at the Noble Experiment the best of luck in their business. If everyone took their craft as seriously as they do, the world would be a better place.
