Thumbs up Looking to learn more about rum :-)


Like Spunky, I found my way to this forum through Debbie's: http://debbiesreviews.proboards.com/index.cgi

and appreciate the fact that one of our members posted the link to this forum. After numerous visits to Cuba, I've developed a love for good rums but want to learn about rums from other countries, also. Here's to a good education

welcome aboard la candela. Now come on, spill the beans. Whats in a candela? We do love rum, and as such we do have ways of making you walk the plank. Hope you enjoy the site.

Don't want to walk any planks so here you go
A candela is comprised of white rum, pineapple liqueur, pineapple juice, dark rum
My recipe is as follows and uses Cuban rums but Americans can sub with other rums:
I say "my recipe" because it was free poured at the resort and I had to practice, at home, until I got the measures down pat. The first few tries were way too strong but this comes pretty close to how it tasted at the resort.
LA CANDELA
Fill high ball glass with ice cubes
Add:
1-1/2 oz. Havana Club Anejo Blanco or Ron Canay
1/2 oz. Cubay Pina Licor (pineapple liqueur)
Top up glass with pineapple juice (I use Dole's unsweetened juice but you can use sweetened, if you prefer)
Free hand pour dark rum over top (approx. 1/4 - 1/2 oz.)...I'm using Ron Caney Anejo Centuria until it runs out. (don't get carried away and over pour as the dark rum will overpower the drink)
Garnish, if you wish, with a wedge of fresh pineapple.
Stick in a straw and enjoy.
If it's sunny, this afternoon, I think I'll mix myself one, sit on the patio, close my eyes and pretend I'm back on the beach under a palapa
