Default Howdy from South GA

Hey ya'll! I am new to the site and somewhat new to the rum industry. I am learning to make my own rum from sugar cane juice. My inlaws make cane syrup from Yellow Gal cane and I have been blessed enough to have all the skimmings and leftover juice i can use.

Could someone please point me to some sites that will tell me how to make rum from cane juice? I need a recipe. All of my seaching is showing to use molasses. Last year, I made some of the best tasting rum you could imagine. (Personal opinion) It just fermented on its own. This year is a different story.

Default Yellow Gal

Yes, Yellow Gal is the species they grind to make the syrup. I am still learning the process, but I know it makes a very good syrup. They do not add anything to the process, it's all 100% pure.

One of the best resources for small scale distilling is the home distiller website. There is a lot of information on this site so fill your glass before you click the link above.
I've heard of a Georgia sugar cane syrup but haven't yet tasted any.
