Here is another interesting syrup for your rum drink mixing, to be used as a spice for the cocktail.
1 cup finely grated light palm sugar
4 thinly sliced kaffir lime leaves
½ cup water
Combine kaffir lime leaves, ½ cup finely grated palm sugar and ½ cup water in a saucepan over medium heat, bring to boil and cook for 5 minutes or until reduced by half. Cool.
Makes ½ cup.
