I had previously posted this message under the essentials thread, and it seems to have been buried. I have copied the original post into a new thread.
forgive my ingnorance in posing this question...
Would you be better off in making a simple syrop from some of these more exotic sugars (brown, demarara or muscovado) rather than using ordinary white sugar. I only post this question, because I have seen many posts about using products with natural cane syrop. Being that I live in Canada, there tends to be a shortage of sugar cane most of the year. Would using these other sugars produce something closer to natural cane syrop?
Also while I am visiting this topic...what is the difference between simply syrop and rock candy syrop. I have seen this mentioned a few times.

Simple syrup is saturated with water while Rock Candy syrup is even more saturated with water, its supersaturated.
Its saturated when there is no more space for water and if you want to supersaturate it you add and force more sugar into the water and go on until the sugar starts to "climb" out of the jar, then you have Rock Candy syrup.
White sugar for syrup is good when you want to mix drinks that has a color you don`t want to be destroyed by a darker syrup. On the other hand the darker sugars has more flavor..so each is useful for different drinks.
If you have only white sugar use it! make a simple syrup, its useful for most things. Or if you find the brown sugars, make different syrups.
Adding a Vanilla bean in the pan when you boil adds a great flavor..

I made 2 syrups today,Cinnamon syrup and Allspice syrup, so that i could make myself a Nui Nui. Its extremely simple to make these syrups.
I halved the recipe though.
Allspice syrup: Place 1 cup sugar, 1 cup water and 6 level tablsp crushed dried allspice berries into a saucepan. Heat until the sugar dissolves. Simmer for 2 minutes. Remove from heat, cover and let sit 2 hrs.Strain and refridgerate.
Cinnamon syrup: Do the same but use 3 crushed cinnamon (Ceylon - real cinnamon not cassia) sticks.
Vanilla syrup: Same procedure but use 3 vanilla beans, scrape out the seeds.
NUI NUI
* 1/2 oz Fresh lime juice
* 1/2 oz Orange juice
* 1 tsp Cinnamon-infused sugar syrup
* 1 tsp Allspice-infused sugar syrup
* 1 tsp Vanilla syrup
* 2 oz Virgin Islands rum
* 1 dash Angostura bitters
* 4 oz Crushed ice
Put everything in blender, saving ice for last. Blend at high speed for approximately 5 seconds. Pour into a tall glass. Add crushed ice to fill. Sink an orange peel into the drink with peel hanging over the glass edge as a garnish.
