When I first read a recipe that combined my favorite spirit and milk I got a sour taste in my mouth. Then I realized that I like rum and milk products in the form of Cruzan's Rum Cream, which has since been discontinued.

Today, Demerara Rum Cream is available and in the islands, there is a milk, sugar and sea weed mixture called sea moss that is commonly mixed with rum. There are few things better than flying fish sandwiches washed down with a healthy glass of sea moss and rum. One thing to avoid, however, is adding even a squeeze of lime to a cocktail containing milk.

And then there's Castries Rum Cream, or Nutz 'n Rum from St Lucia or Nut Power from Antigua.

I have a can of Jamaican irish moss here...well then it could be used to whip up a drink with say El Dorado 15 + some milk?

I'd use something lighter like El Dorado 5 year old, Appleton VX or maybe Cruzan 2 year old.

At the risk of sounding naive...wouldn't the alcohol in the rum curdle the milk??

Ever had a white russian? Doesn't curdle there, so why should it here?

I don't know. I guess it was just my initial reaction to reading about rum and milk combined in a drink. Plus I had forgot about white russians as it has been a long time since I had one. I'll go to the back of the class now.

Don't be so harsh on yourself. I am a complete newbie to this stuff :)

That being said, if you think about it, there are an abundance of milk and cream examples in the liquor world :)

Bailey's irish cream
Mississippi Mud
White Russian
Kahlua and cream
I am sure there are others. Most of them are schnapps based drinks and the like.

I sometimes mix rum with milk, condensed sweet milk, and coconut milk...+ ice..and a dash of grated nutmeg.

You listed off those drinks and I remember a favorite dessert. Kahlua in milk over ice cream..hmmm.

Now if one were to use milk as a base for a rum cocktail, which would be the best rum to use? Something flavored and with a low ABV??

Pina colada is heavy on coconut milk :)

Cruzan Rum Cream has been discontinued? Crap... Its the only rum cream available in PA other than Mi Abuela Coquito, and eventually Castries.

I just picked up a bottle of El Dorado RUm cream in NJ, good stuff! It let me to a night of drinking ED 15.

I also saw Angostura had a rum cream, it looked a little "solid" in the bottle. It said that it must be shaken before serving. Anybody try this one?

It was just the initial thought of pouing milk into rum that threw me. In my mind, the rum creams were a different entity. I imagine the rum creams sre delicious in coffee. Since I have enjoyed Baileys over ice after a big meal, I imagine a little rum cream would even be better.

All right. After reading about the rum creams in this thread, I went out and found El Dorado's rum cream on sale in one shop and a single bottle of the Cruzan in another. Which of the two would you guys recommend. To anticipate, I am not going to buy both since I don't know if I will even like it. My first thought is to buy the Cruzan since it has been discontinued, but that isn't necessarily the best thinking. Help.

personally, I hoard rum creams of all types. I love the El Dorado, the Crisma from Barbados, blue mountain coffee rum cream from Jamaica, Castries peanut rum cream from St. Lucia. I have not tried the Cruzan.

I've never had rum & milk. I should try it.

I do know that no one should ever try gin & milk. I have. And yes, the milk DOES curdle in gin.

Try mixing Cachaca with milk, sweet condensed milk and coconut milk, you get a Batida de Coco. Yummy..

The cruzan rum cream is very nice, the first rum cream i ever tried. Its got nice hints of sweet berries in its finish. It tasted similar to El Dorado, although I didnt compare them side by side.

Carageenan (http://www.lsbu.ac.uk/water/hycar.html) AKA Irish Moss or Seaweed is widely used as a thickening agent in food production. It was commonly used as a flocculent in boiling wort in beer production.

I have not seen the drink you describe Tiare, but I think your "Irish Moss" is the same thing.

After reading everyone's responses, I'm heading out the liquor stores this afternoon to pick up both the Cruzan and El Dorado rum creams. A friend and I are going to spend an evening sampling and comparing. I can't wait.

I'm counting on your feedback to let me know if I should start hunting down some of that Cruzan rum cream that I've never tried. Did someone say it was being discontinued?

I haven't seen it in a few years and I heard that it was going to be discontinued. My guess is that it was one of the casualties of the corporate appetite that consumed Cruzan in the 90s.

It was made with Irish cream, which was expensive and probably didn't meet the corporate standards for mass distribution and profit. I was very good, but I don't think it was better than the El Dorado rum cream which is available today.

There's a Reference to Rum-and-Milk in Dickens's Great Expectations as a breakfast drink, 'taken with a biscuit,' a cookie, of course, the time would be around 1840. That was considered proper for a day's start before taking a walk in the morning air. I'm looking at the recipes and trying to find one that looks good. I don't much like cream liquers, you're asking a lot from the milk in the bottle. I'd rather make it fresh. Not worried too much about the effect of the rum on the milk--I've had rum in eggnog many times.

Best!

i still see the Cruzan, but i have seen a couple of 'hints' it may be going away.
Edward is being kind here though, the El Dorado Rum Cream is FAR SUPERIOR.

And Rum+Kahlua+ Vanilla Ice Cream, is a drink called Moose Milk;)

Rum+Milk, is a drink called Moose Milk;)

here Moose Milk is made of vanilla ice cream and gin, I prefer rum for great flavor.
