Sorry, have no measurements..

Chop some parsley very very finely, do the same with red ognion and challots.
Put aside.
Heat some oil in a heavy frying pan and then take a bunch of nice large tiger shrimps and fry them lightly for a short time.
Take the shrimps out and put aside. Add the shopped stuff in the pan and fry it.
Put back the shrimps in the pan and Add some dried chili flakes, some salt and freshly ground black pepper.
Stir and add dark rum and let the flavors just blend.
Now add a spoon of white rum and flambè.
Ready to serve! with whatever you feel should go with the shrimps.

Some coconutmilk added at the end of cooking is also yummy.

"Rum Shrimp Flambи"

I do something similar for appetizers, the only difference is that I cook the shimp until not quite done. Then I spread the shrimp on a baking sheet and sprinkle them with grated parmesan cheese. Then place the baking sheet in the oven set to broil until the cheese starts to melt and turn golden. It doesn't take long so keep a close watch! Rum, shrimp, parmesan, what could be better?

im gonna try this tomorrow with my rum, maybe add some pinapple in there for the true hawaiian taste!
