Grilled pineapple glaze
1/2 cup of dark or spiced rum (I used Pyrat xo reserve as I thought the orange undertones would compliment the glaze.)
1/2 cup brown sugar
1/4 honey (use real honey only)
1/4 orange juice (I used a pineapple/orange juice blend.
The recipe called for only pineapple, but I used pineapple, mango, banana, kiwi and peaches; they were excellent. The fruits that worked the best where the pineapple, banana and the peaches. Mango were ok, just a lot of work and the kiwis were too soft and a couple fell of the skewers.
