i am going to limit these to rums.. because--- well i LOVE Rum, Ron, Rhum-- etc.. and we are at the Ministry!

i have mixed a punch of sorts... thinking of 2 of my rummy buddies (one of which planted some of these ingredients in my car while i was working. . .THANK YOU!).
i have made 2 drinks (at 1 Time, 1 for now and 1 to follow!)..

007 Matusalem Rumdog

7.5 Oz Ron Botran Oro
2.5 Oz Fresh Lime Juice
10 Oz Coconut Water
8 - 10 Oz Sparkling Wine (CAVA!)
+ Bitters (a variety-- so choose at random!)

i hope you like this new addition to the Connoisseur's Cabinet--

For a place to work, forrest has one of the best jobs I can think of. It's just that So Cal traffic that would kill me.

Well I just ordered me some Appleton 21 year......I am hoping it will have a better taste than the 12.....it was ok, but I couldn't get with it.....If this one is not to my liking as well I will guess I am more into the rums that are 5 years old.....but I am still new at this......and I am going to continue to look for that one bottle that blows me away.

The 21 reminds me of the v/x - - -but all grown up.

My problem is i don't believe in better or worse. . . Things work, or they don't. . .
Sometimes, that is the way it goes..
i "generally" prefer 'younger' rums (rhums, ron--etc) so i know what you mean..
There is not a problem with that!
As a search . . .embrace discovery! You can taste so much--with no rules!-- H A V E FUN!!!

It is rum for goodness sake!

Last night i was out and i had an amazingly tasty Rum Drink @ 320 (http://www.320mainsealbeach.com/index.html) in Seal Beach called the 'Scintillator' (Zaya Rum, Grand Marnier, Absinthe, Bitters. )
If you are in the area-- definitely check that place out!


Today it was simple: Rum and Coffee--6 of them...
Not very exciting-- but there it is..

i started with a Cachaca Sour <or 3.5>, but . . .

i started working on a "Fancy Sour" where the modifying liqueur is Macadamia Liqueur-- and now on my 4th-- i'll say TASTY! When i 'detail' the measurements i'll post it...
oh yeah and i have to name it...

Thursday night-- is alright by me... i'm going in for 5 (Which is actually 9 <8.5> because of the Sours...) so, i got that going for me. . .

i started with Brugal Extra Viejo . . .
With every intention of having it neat...
didn't work. Added ice and-- it was alright. . .
Soda. . . oh yeah- tasty!
So i finished the the Brugal Extra Viejo, and now i am having Ron Botran Oro and soda {with a dash of bitters}and frankly--- i like it more....

Sorry that i have been derelict in my postings dear Rum lovers . . . i assure you that i have been drinking!

Tonight is Hot Tea and Rum ( i have a toothache...)

Started with Earl Grey (2 Bags, long steep 4-5 oz boiling water) add 4 oz Barbancourt White.

Moved to 2 Bag earl Grey 1 Bag Mango (same process) 4-5 oz Barbancourt White

The Steep is happening on my 3rd and it is Raspberry leaf, Chamomile, Earl Grey (Same Process) and will be augmented with Cuca Fresca Cachaca --4 oz.

i may have a warm cocktail afterward, but who knows...

Rhum Chauvet 'Special Cocktail' is Rhum Traditional (distilled from Molasses) from Martinique, bottled in France at 44 &#37;
I didn't see it on HT.
We got it as a close out so there is not much and Rumdog & i are probably going to drink it all.
How is it neat ?
Delicious.

i agree there is a lot of Orange flavors in the XO but i don't dislike it . . . Definitely something i don't drink 'neat' but a lovely component/ float to a variety of drinks..

How is it neat ?
On the nose there is dried lemon zest, verbena, currants or sultana-- kind of reminds me of a cachaca, or maybe even a pisco. . . there is also mallow or angel breath in the background. The taste is fresh, light spices and and a clean mineral driven mouth-feel. Rumdog007 mentioned that it reminded him of a good grappa, and i can see that-- there are a bunch of different blossoms inside-- very nice. The finish follows suit and ends clean.

Sorry this is a close out-- $9.99 for a Liter @44&#37;, i call that a deal.
i haven't really found a drink that it 'sings' in but i will happily keep looking.

Good. I don't a lot of experience with agricoles, getting used to 'em. Not a lot of choice in Quebec, the most popular is St.James, and we ain't even getting the good ones. We have a few high end agricoles aged in France, by Chantal Comte : http://www.chateautuilerie.com/nos_vins_rhums.php?gamme=5. If you happen to stumble over them, indulge yourself.

Currently trying to finish my overproof (63%) Wray & Nephew. That stuff ain't for the faint of heart, that's for sure. Drinking with Coke, and it ain't so good. How do you drink your OP ?

Pyrat XO falls into that category of rums which are sweet and fragrant, but not the sort of thing I can drink on its own. Having said that though I think it's absolute magic as a floater or mixed drink as forrest said. I bought a bottle about 2 yrs ago and was disappointed, so I used it as a floater on a number of drinks. I ran out of it over the summer, and I'm interested in replenishing my stocks for that very purpose. Beautiful stuff, but not a sipping rum -- not for me, at least.

Well Rhum Chauvet is not Agricole. . . It is yummy, but . .
Agricole must be distilled from 'fresh' sugar cane juice...
[there are more rules...and they all mean something...!]
Chauvet is made from Molasses. . . .

Wray & Nephew is an absolute Gem!

A friend of mine ( who is a rep for W&N . . ) had a bottle and asked me... the same question . . .
J Wray and Grapefruit--- is a a no-lose scenario!

Thanks for your patience Forrest, I read too fast the first time...I saw Martinique and 44% and assumed it was agricole. I read again and saw Traditional and Molasses... oups.

The drink i "created" for my friend was J. Wray O.P.(2-3 Parts) Grapefruit Juice (3 - 4 Parts) Cane Syrup (1 -2 Part), Lime Juice (1 Part) Mix with ice. . . .and strap in!

Well I didn't have Cane Syrup, so I just added orange juice instead. Definitely an improvement over OP and Coke. It does have to be handled carefully though, that stuff is powerful.

Well Ben that is original-- sub OJ for Cane Juice-- Oh Yeah!!
(i would say simple syrup is a closer sub-- but hey good is good!)

Powerful is the truth!
J Wray and Suntory Grapefruit Soda is a hit also!! With a couple drops of bitters-- or a splash of Aperol...

i am enjoying a 'Royal Daiquiri' very tasty!!
(i just leave the sugar out....)

ROYAL DAIQUIRI

1/2 oz fresh lime juice
1/2 oz Parfait Amour liqueur
1/4 tsp bar sugar
1 1/2 oz white rum

Blend or hand shake with 1/2 cup of crushed ice and
strain into chilled cocktail or coupe glass

Now i am having my first taste of Downslope Special Gold...

Well i started off with dessert...

1 1/2 Oz of Kraken
1 oz of Rum Chata
1/2 - 3/4 oz of Goslings 151
1 Egg

Dry Shake
Shake with ice and strain into chilled cocktail glass
Garnish with fresh grated nutmeg/chocolate . . .
-- i'll think of a name later...

Then with Thai food i had an--
Air Mail

3/4 oz fresh lime juice
1 tsp honey (Wild Turkey American Honey)
1 1/2 oz gold rum (Ron Matusalem Classico)
Shake in iced cocktail shaker & strain/build
Strain into highball glass
Fill with Champagne (Cava...)
Serve in a highball glass

But hey the night is young and these are only the drinks . . .

Dont think i haven't been drinking rum-- i was just out so it is not as easy to post.

Last night i had a few amazing rum drinks
One them was a Mai Tai with 'just' Smith & Cross and it was a real saporous delight...

I wish I could airmail you a sample forrest, as tonight I am ever so slowly sipping the Royal Batiste that we talked about. This is really decadent, and so yummy. It's weird in a way too, as normally I would expect the Rum to provide the dryness and the Grand Marnier to provide the sweetness, but this version is kinda reversed reversed.

The Royal Batiste

1 1/2 oz Zacapa Centenario XO
1/2 oz Louis Alexandre Grand Marinier

Build in a cocktail Glass on one Large Ice Cube


When I have the 2/3 of cocktail sipped I am going to add 3/4 oz of the Louis Alexander and see how a drier reversed version tastes.


BTW: Is this cocktail 'forrest approved'.

Nice Forrest, was that yesterday? what are you drinking now? i tried to pair my ONO cajun with Port Royal demerara and OMG its a BIG win.. Port Royal is a bit dry and the cajunspice is pretty sweet.

I wonder why i always end up sipping my rum combos at 6am?

Well forrest, The cocktail I like to tinker with, the Alpine Meadows, that you helped me design (more truthfullly the cocktail that you designed) for Glenfiddich Whisky. Except I turned it on its ear with El Dorado Single Barrel PM.


Sugar Cane Meadows

1 Oz El Dorado Single Barrel PM
1/2 Oz Tangeray #10 (Gin)
1/2 Oz Cointreau
1/4 oz Peach Schnapps

Stir with ice until chilled,
strain into chilled cocktail glass, garnish
With lime zest

Yummy!!

Fear not dear friends at my silence. i have been consuming regularly wonderful rum.
The reason i have been remiss in duty to post 'What i amdrinking' is more 'domestic' problems... my neighbors are loud and typing (which is not a strong suit) is intolerable with bad 70's drivel turning your ceiling into a sub-woofer or the other side blasting Discovery Channel on a system designed for a small movie theater-- not to mention the myriad of little dogs abandoned to bark--non stop-- in a paralyzing cacophony that attacks from all sides... Throw in a few 14-16 hour days and a lover who is even more bothered by the noise and you have a desperate situation.
Enough complaints-- onto the rum!

That is a nice compliment forrest, I always appreciate your input in the cocktails that I attempt, and it seems that for every 9 you must fix I get one like this one, that works on its own.

I finally got myself some sugar cane syrup, and I tried the drink in that proportion : 1-4-2-1 (OP-GJ-CS-LJ).

For the first time I really appreciated the OP. Usually I'm a neat drinker but I think I will start exploring my mixing capacities with that cane syrup. Now that's a sweetener.

I had a nice Appleton VX cocktail tonite, the one i wrote about in my review on Sunday; I call it

The Arctic Traveler

2 oz Appleton VX
1 oz Cointreau
1 oz lime juice
1 oz White Cranberry juice
flamed grapefruit zest
3 large Ice Cubes

Shake all the ingredients over ice
Strain into a cocktail glass
Garnish with a flamed grapefruit zest
Add the large Ice Cubes

An i know i am not supposed to add the ice cubes after I strain my cocktails, but darn it I like ice!

Ben, i agree. i am also 'usually' a 'neat-drinker', tho a lover of cocktails from WAY back, "TO ME" that is one of the secrets of OP . . . because of its proof it works in a myriad of cocktails--the limit really is our imagination!

Wow! Impressed and amazed - have enjoyed reading your cocktail suggestions and commentary - learning alot. With all respect, I thought perhaps, this title said it best - What are you not drinking? Your comment on Irish whiskey just reminded me of the rounds of variations on Jamaican Car bombs (vs. Irish Car Bombs) I was repeatedly gifted in Negril, Jamaica last summer. I still coudn't figure out which was the bunker buster, needless to say I took a cab. Plan on making a tour of Hi-Times in April. Have chatted with Trace several times on the phone, must have missed you. Will you be around for a drink mid April? Planning on coming through those parts and thought this would be a good pit stop, and see if I can sample what Forrest is drinking then:)drooling3.gif

Tonight I am enjoying a cocktail I made with the help of forrest!

The Chinook

1 1/2 oz Momento Amber Rum
1/2 Oz Cherry Brandy (cherry whisky works great too!)
1/2 Oz Lime
2 Tsp Simple syrup
3 Large Ice Cubes

Put all ingredients into a blender.
Blend until smooth(ish).
Serve in a wine glass.

Garnish with a thin lime slice folded around a Brandied Cherry with a spear through it.

Forrest, You absolutely rock!

My review of Momento Rum will be posted next week but i wanted to tease you with this great ccoktail!

Last night i tried the Plantation 20th Anniversary
Aromas of vanilla, dried papaya, cream, coconut, sweet spice cake, banana and sugarcane syrup. The palate leads with a soft, rich entry evolving to a honeyed spice cake, supple fruits, full body, more dried fruits and sugary well balanced baking spices. The finish is a spiced confect with dried cherry and creamy vanilla. After i got over my ridiculous expectation i thoroughly enjoyed this rum.

Also last night i had a new white rum called Denizen.
Aromas of dry banana, dry golden raisin, sugar cane a very soft. The flavor are a touch sour in a very tasty sort of way, with more dried fruit (more tropical though) and very intricate spices- very flavorful. The finish is long, spicy with white pepper and citrus pith. This is nice but it will be awesome in a cocktail!

So last night i was savoring a new/old liqueur called Creme Yvette in a couple drinks, here is one that stuck:
1 1/2 oz Rhum JM VSOP
1/2 oz Creme Yvette
1/4 oz Lemon Juice
Shake/Strain garnish with Large Lemon zest.
When i name this and settle on a recipe i will add it to the database.

Then it was on to a new fave:
Naranja Doble

1 1/2 oz Don Q
3/4 Fresh OJ
2+ Dashes Regans Orange Bitters
Shake w/ Cracked ice/ strain, garnish with Flamed Orange zest, or large orange peel.
This work great with any rum (and cachaca), but rums from places that speak Spanish make the name work...

Last night i started with 300ml (i am trying to go metric...) of Mae De Ouro. Followed by 250ml of Plantations 20th Anniversary and then some Ron Abuelo 7. All in all a great night.
By the way there were some 'sips' in the day,,
1 Zaya (Guatemala)
2 Rhum JM 97
3 Ron Abuelo 12
4 Don Q Gold

and 7 others that were not rum so i wont bother you with the details!

I was going to drink a concoction tonight made with Macombo 20, Bombay Gin, Old Parr Superior Scotch and Grand Curacao. But I got busy and suddely I noticed my Ice Cubes were half melted in my glass and I hadn't started.

So I added a touch (3/8 oz) of the Old Parr to the glass, and then about 1 1/2 oz of the Macombo. I thought I better taste it to see how it was going.

Oh my! I didn't need to add anything else. I think I will call this drink The Last Vaquero.

The only drawback is when I made the second I had to wait for the ice cubes to mely halfway so I could capture that same point of water to ice to spirit. But golly is this ever nice!

Last night it was Rhum Agricole: 1 Batiste 2 Depaz 3 St James Hor d'age 4 Rhum JM VSOP 5 Clement VSOP 6 Clement XO 7 Rhum JM 97 and then i repeated four of these in even healthier portions (each glass was a solid shot, but the repeats started looking like 'triples or really healthy doubles....).

What got me on this was a Rum tasting at Caña that i couldn't make featuring Rhum Agricole. Rather than dashing my heart against the stones i went home and ran through some of my agricoles-- admittedly the more 'common' agricoles but i save the other stuff because i have so little of it...

i started the rum portion of my evening with a glass of Ron Cartavio 5 on ice (4 fingers) (normally i am a neat drinker but i was in the mood for ice...), then i followed that with a glass of Ragged Mountain Rum from Berkshire Mountain Distillery--- hellz yeah and to follow i am on a glass of Coruba which i believe will be followed by another....

That's a quality recipe. When I'm in the mood to get real fancy, I'll dip an orange slice into agave syrup, toast it with a cigar lighter, then muddle that with the bitters and about a tablespoon of water...add two jiggers of rum. Love the nose on that cocktail.

On a side note, I see you giving some love to mezcal on your blog. Nice choice on the Don Amado, I'm a big fan of the anejo. Try a "Mezcadillac" margarita with a float of the Amado instead of grand marnier. For that drink I almost always use a silver or blanco tequila so as to not infringe on the aged flavors of the Amado.

That is interesting. I'm currently cleaning up my bar of any non-rum related bottles. Not that I don't want to keep any other liquor but I will only keep from now on small bottles because larger bottles can lay there for years before they get drank.

So I am drinking a lot of non-rum these days: just finished a bottle of Triple Sec, a bottle of Tanqueray Gin and a bottle of Tia Maria.

I have like three bottles of vermouth, two whites, one red and could not really come up with something to mix it yet.

You are mixing it with rum Forrest?

But if your vermouth has been opened for more than a month or two just toss it.

Well a 'Rum Sour' with Bacardi 1909. . .SOoOoOoooO good.

One with Seco Herrerano totally acceptable, better than average (but i made it... so)

Oh and to follow it up i have had several Mehkong (2 1/2 Oz) Dark Creme de Cacao-Marie Brizard (3/4 Oz) on the rocks and it is tasty.. not amazing mind you, but enjoyable. A little work and it could be great.

Just had the opportunity to taste Zafra for the first time...Wow! What a wonderfully complex spirit from start to finish, it quickly goes on my top 10 list and could be top five. I hope it is one of the rums featured at the MOR Festival in NY next month, could be a big winner!

i had the chance to meet the Master Distiller Don Poncho and let me tell you this guy is awesome! i did the first write up for Zafra when it was launched Oct/Nov- 09 i was a fan then and even more so after meeting the Master. He is/was the Master Distiller at Ron Abuelo for 30 year (this is where the Zafra Juice comes from...) and before that the Master Distiller at Havana Club for 20 years... talk about credentials... The Zafra is his 'pet' (i cringe at saying that because it can sound so pejorative.. i mean it only with the greatest affection..)

So there it is..i am also on the Zafra praise bus . . .
can i get a witness?

i finished my second double of 7 Tiki and i am impressed.
Not really much for spiced but these guys do it well-- real infusions, real rum, good stuff. . . no scummy film on my teeth or stupid old 'oil' taste..

i have not had that. In the US the only Coruba we have is the dark and the flavors. The dark is the one that i am always referring to. The flavors are what they are supposed to be, but not my thing. The dark is my favorite dark rum (standard offering).
So i would not know the cost of Coruba 25, but Appleton 21 is from the same distillery (and it is fantastic) costs about that much and Appleton 30 costs 2 1/2 times as much... so that doesn't sound like a bad deal to me.

im currently drinking a Balvenie 17 Year Old which was bought for me for my retirement do, http://www.masterofmalt.com/whiskies/balvenie-rum-cask-finish-17-year-old-whisky/, i dont have a huge knowlegde of rum but its the most well balanced ive had by far.

Hey Forrest - Glad to see you haven't went totally AWOL on us. Talked to you at HiTimes during the holidays when you were running on empty. Hope you've had time to recharge your batteries. Tonight, I too am enjoying the Plantation Barbados 5 yr. Grand Reserve I picked up on my last visit. On your recommendation, I snagged the last 1.75L bottle found hiding out on the bottom shelf. I sure hope you guys can get them back in the bonus sized bottle. It may be (or was) the best value in a nice combo sipping/mixing rum.

Yesterday i spent the day trying through the Prichards Flavored Rums. Meh.

The regular stuff is good and the surprise flavor was the Cranberry... dont really see the point but it wasn't bad.

Its minus 24 celcius and tonight I had a little Buffalo Trace Bourbon, some Hacienda Saruro (awesome stuff), and some cola. I invented The Crocagator!

i 'aged' some Old New Orleans Amber with Spiral oak staves in a carboy... anyways that is what i had this morning... Dusty yum! A little to much 'wood' (i wonder why....;) but tasty.
If there is any left i will take it to RUM Club.. The first Orange County RUM Club is March 31st at Eva's . . .Tell your OC friends to or you come by...we'll have rum... we'll share...

i am in So Cal. My friend got me the Samaroli..

Are they're blends generally winners. I have had one of the Caroni blends from Jamacia. Moving slow in South Carolina!

i've only had a few and i would say they are winners. Usually on the 'bigger' more pungent side of the flavor profile which is delicious to me but some folks are put off by. So when i mention them to people i usually describe them that way so everyone knows what they are getting into.

More Panama Red tonight. I like cask strength whiskies, and I guess this is as close to a cask strength rum as I have found. Like I said earlier, big flavour and I should add big alcohol push.

I followed the Panama Red with a Little of the 42 % strength Plantation Barbados Rum. I love that Cognac finish!

But, as the sun is expected back next week I ordered Pampero white and Caney Carta Blanca to see if they match the splendid Legendario anejo for ti'punch.

.5oz of Appleton Estate Reserve with 1.5oz and 1oz of Dark Cola and an Ice Cube.. I can't enjoy it without dilluting this rum to smitherines! Enjoying the drink now though
