View Full Version : Pirate Pancakes with Rum and Coconut Syrup

Made up a batch of "Pirate Pancakes" for my boys this morning and they loved them. I made a rum based coconut syrup for mom and I to put on ours :).
Pancake Mix:
1 cup flour
1 egg
1tsp of sugar
2 tsp baking powder
3/4 cup coconut milk
1 banana chopped
I never follow recipes so the below are just approximates
1 tsp sugar
1/4 tsp fresh ground nutmeg
1/4 tsp cinnamon
1/8 tsp allspice
1/8 tsp fresh ground clove

Rum Coconut Syrup
All are approximate measurements
6 oz dark rum (I used Black Seal)
1/2 cup packed brown sugar (would imagine would be great with a raw Demera sugar, but I did not have any on hand)
half stick of butter
pinch of salt
1/2 cup coconut milk
cinnamon
fresh ground nutmeg
ground cloves
Allspice


Great way to start the day :D

Don't wanna sound too stupid, but do ya heat the syrup?

Yes to get the brownsugar to melt, I warmed the syrup up to a slow simmer. I held some of the rum back about 2 oz, for the syrup for my wife and I to use on our pancakes, and added it AFTER I served my kids drool.gif
