View Full Version : What rums do you like to Flambe with?

I wanted to get see what other people cook with, specifically flambe desserts. I was just talking to a french woman who was telling me the best rum (for cooking) is puerto rican rum. Both me and her husband chuckled, me because the misses is puerto rican, and her husband because with his belly...he knows that he did something right by marrying a french cook.

The Sunset Very Strong Rum from Vincy has a cool blue flame. Wray And Nephew Overproof flambes well. Gosling's 151 is a favorite.

Don Q 151 proof from Serralles here has a pretty quick flash point.

Nice flame color too.

One of these days my people have to meet your people rum runner, I have always used Bacardi 151 (God I hope my PR future in laws don't read this) but would love to try the Q 151 at some point. The goslings was one I was wondering about, that and the lemon hart. Didn't know how different it would be with a dark rum. Thank you both rum runner and Robert for the info.

I have only used Lemon Hart 151 and JWray, both are good i think but have very different flavors. I would love to try Goslings 151 as well.

I hate bring this up but it is very important when using high proof alcohol that you pour the amount of rum you're going to use in a cup away from the flame and then pour it onto the hot pan. NEVER pour high proof rum out of the bottle.

There is a very good chance that the flame will travel up the path of the rum, into the bottle, expand the vapor in the bottle and project a stream of flaming rum from the bottle across the room. If you're lucky you won't burn too much.

A friend of mine almost burned up his boat when a high proof rum bottle caught fire as he was preparing a flambe dessert. He did burn some curtains and set his wife's shirt on fire. She quickly grabbed a drink and poured it on her shirt to extinguish the fire. Fortunately alcohol fires are relatively easy to extinguish with water, but they still burn.

High-proof alcohol fluid is flammable while vapors are combustible. There's a world of difference between flammable and combustible. If the vapors in the bottle ignite, all bets are off.

I always pour into the cup 1st, im a slob when I cook and the last thing I need is an open bottle of overproof by a flame. I've got no hair to loose so it would be burning skin baby, mmmmm, not the dessert most would want.

you know i always pour my over-proof into a cup also, but then i just drink it rather than lighting it..

much safer that way. it may burn your brain but it won't singe your hair.
