After noticing the tastiness of throwing either Cointreau or some Chambord in a glass of champagne, I looked up and tasted some Champagne cocktails that include rum. I enjoyed an American Flyer: White Rum, Fresh Lime Juice, and Champagne. Also created something that I really liked (don't know if it has a name) White Rum, Fresh Lemon Juice, Cointreau, Champagne.

Any other recipes?

I'm interested to see any responses. I've never mixed the two. I used to drink "Death in the Afternoon"s, but that's the only champagne mix I think I've ever had. I've never even had a mimosa :)

I'm familiar with a couple of champagne and rum drinks made with dark rum, but none mixed with white rum.

A drink I served friends last new year's eve was champagne, Santa Teresa 1796 and a few drops of sugar cane syrup, which is a variation of a champagne and cognac cocktail but I don't know the name of the original.

A couple of friends who didn't want one of these in the first round - because they didn't drink rum, asked for and drank several during the ensuing evening.

Question, what sweetness do you prefer in your sparkinling wines/champagnes when mixing? I usually buy Brut or Extra-Brut, but I've been drinking it on it's own. Just wondering if something sweeter would be nicer in the mix.

i usually use Brut, but i like things less sweet. i think when it comes to sweetness everyone has to adjust for there preferance.

I'm curious about using rum in a champagne cocktail, as I'm only familiar with the "traditional" champagne cocktail with a sugar cube, bitters and a lemon twist. Seems like adding another spirit could throw the whole thing out of balance.

I think that drink already has a name. An Old Cuban. Supposed to be served up in a wine glass rather than on the rocks in a highball, and should use an aged Cuban-style rum rather than white, but essentially it's the same principle.

I haven't yet tried it but I figure a white agricole-style rum could be good in this type of drink.

Incidentally, I believe the original champagne cocktail was often served over crushed ice.

I was served that drink in San Francisco about four years ago made with Neisson Blanc, Petite Cane Sugar Cane Syrup and Brut Champagne. Everyone loved it but the bar has since closed. Maybe they were ahead of their time.
