View Full Version : Sugar Syrups served with Rum

I mix drinks in a cocktail bar in the east end of London. We have a massive premium rum selection at my bar which I am slowly beginning to sell to customers who care about rum, and to taste myself when I can afford it. (or my boss allows me to) My favourite rums come from Barbados and Trinidad. I'm looking for information from you about sugar syrups served with rums. My boss has told me that in distilleries rums are served with sweet syrups which can be sipped in alternately with the rum or mixed? We would like to do something similar to this, if it is authentic. Does anyone know of this practice? And what it might be called?

At the risk of your boss reading this, I have to say that after visiting scores of distilleries, I've yet to be served sugar syrups to be sipped between sips of rum.
But while on the subject of sugar cane syrup and rum, I have to say that there are a number of sugar cane syrups and like rum, syrups aren't created equally. There is a vast difference in syrups.

Petite Canne Cane Syrup is a very good, pure cane syrup which can be used in drinks as a substitute for simple syrup or rock candy syrup. Please see Ed's remarks:

It works perfectly in a Ti Punch and other rum based drinks.
Depaz makes a dark syrup. It is a molasses tasting cane syrup and is imported from Martinique.

Sugar Cane Syrup like the rhum from Martinique is not all the same. Depaz markets a sugar cane syrup which is much more like the molasses flavored product found in the US in the south. It's fine for cooking, which is what it's used for in Martinique, but as lperry suggests, it isn't necessarily going to make a good cocktail better.

As for syrups... well others have handled that better than i!
