We've been delivering some training for Diplomatico in London bars recently. To prepare us, the distillery sent us some detailed information on their wonderful range of rums which I thought some of you might be interested in.

Diplomatico Production notes

Venezuela has special tropical characteristics due to the influence of the Andean Mountain Chain, the Caribbean Sea and the Amazonian jungle.

1. What type of sugar cane do you use as your base material......green, blue..???
We use different varieties of Green sugar cane, mainly Venezuela, Central Roman and Canal Point.

2. What is the soil like in the area where the sugar cane is grown?
Sandy and clayey soils.

3. What is the general climate of the area.?
Humid Tropical climate with warm temperatures during the day (32ЄC average) and cool temperatures at night (25ЄC average) during all year. This condition is favorable to obtain high yield of the sugar cane and in the ageing process.

4. What is the altitude of the region where the distillery and ageing warehouse is?
450 meters above sea level.

5. Do you mix sugar cane juice with sugar honey before fermentation or do you only use sugar honey?
In Reserva and Reserva Exclusiva we use a combination of sugar honey and molasses which gives the personality and identity to our rums.

6. What is the fermentation time?
Fermentation time is around 30 hours.

7. What type of yeast do you use?
We use a special strain of sacharomyces cerevisiae developed in our plant.

8. How many column stills do you have?
There are eight different distillation systems.

9. How many pot stills do you have?
Two

10. How many different styles of rum can you then produce.?
We produce eight different light rums and three different heavy rums which are aged in different barrels obtaining more than 60 different rums.

11. Which types of wood do you fill into.....?
American white oak: ex bourbon and ex malt whisky
White oak : ex sherry

12. What is the size of the different woods....no. of litres?
American white oak: 180 lts. (ex bourbon and ex malt whisky)
White oak : 500 lts. (ex sherry)

13. What is the type of water used for dilution?
Pure undergound water rising from the mountains of Terepaima Nacional Park.

14. Types of rum used in the marques?
Aсejo 5% heavy rum / 95% light rum
Reserva 15% heavy rum / 85% light rum
Reserva Exclusiva: 80% heavy rum / 20% light rum

diplomatico is one of my all time favorite and i never been able to find any in fo about their rum before.
i m gonna have some readind while i ll be in holidays

Based on profile, not the least bit surprised they incorporate ex-sherry casks.

Thanks Paul for the interesting overview.

We'd welcome impressions of the Añejo and Reserva, with particular interest in comparisons to our much-loved Reserva Exclusiva.

I like the rest of the Diplomatico range - particularly the Reserva

The Anejo is a real mixing rum - a lot drier than the Exclusiva with lots of caramel, toffee and sweet vanilla notes

The Reserva is sweeter, but nowhere near as sweet as the Exclusiva - lots of chocolate and caramel flavours with a good deal of spiciness. Yum
