View Full Version : Coconut Water Mojito

I was given some fresh mint from a friends backyard, and of course, this led to the cocktail. It was delicious!:D
12 oz. Collins Glass
6 mint leaves
3 half slices of lime(after rolling the lime on the cutting board)
Simple syrup to taste(I used about 1/2 oz or less)
Appleton white Rum, a good measure, say 3 -4 oz( I eye balled the amount)
Coconut Water Ice Cubes
Coconut Water
Muddle lime, mint and simple syrup(don't over muddle), add ice cubes,add rum, then coconut water. Stir well, enjoy. By using coco water ice cubes, the drink does not become diluted.
I will try this next with white agricole, and other light rums, and also a few amber rums and darker rums. :)

I`m lucky Hank, i happen to have some of those coconut ice cubes left in my freezer ..so i can try your Mojito tonight!:) it sounds very tasty!

There are few things that mix better with rum than coconut water, even if it has been frozen.

I think we can ship some coconuts to you Ed.
Before the mid-1970s, South Florida was so full of coconut palms, we had millions of coconuts on the side of the road, surrounding the beaches, right in the front yard of the house. A palm blight disease took many trees out in 1975. There are still many coconut trees, but not millions of coconuts laying around on the ground everywhere like before.

Before the government destroyed most of the citrus trees four years ago in an effort to eradicate the citrus canker, we had key limes, grapefruit, oranges, tangerines, pomelos, lemons and other varieties in many folk's yards. They're just starting to come back now and it's going to take some time to bear fruit again.

I remember as a wee young lad waking up and going out (still in my birthday suit) to pick a grapefruit from the tree in my aunt's yard for breakfast. It was sooo good. Ah back in the day...

Robert, you are bringing back many great memories from when I was a kid.
My grandmother lived in Miami, and we'd spend the summers down there with her, and occasionally we'd go out to Key Biscayne and stay for days on end at the Silver Sands Motel.
I remember the coconuts everywhere on the ground!!!
My grandmother's house was one of those with the lime, orange, banana and other fruit bearing trees in the yard.
Those were fun times.
I have purchased both Graces Coconut Water and Vita CoCo, and some of the Vita CoCo comes flavored. I enjoy the one with pineapple. The Coconut water ice cubes really bring out more flavor in drinks.

Yesterday I substituted Appleton V/X for the Appleton White, and it was delicious. A larger profile of flavors. Today, I think it will be time for agricole.
Tiare's Mojito was much more pleasing to the eye then mine, she is quite the artist.

wish I had the weblink to her flickr page at the moment... Tiare has a LOT of really mouthwatering drinks that she has made - like fine art coming from the end of a paintbrush!!!
Those pictures would inspire one to drink!

The same thing happened to me yesterday. rumdog007's mint factory was blocking the back door again so I a got beautiful bounty of several resplendent varieties of mint.
Also, the funny thing is, I (having never seen this post... i swear!) was all day planning to make coconut water mojitos (thinking they were my own invention;), but as I was leaving work, I saw that we had some Schweppes Bitter Lemon so I got distracted and made this instead:
10 -12 Mint leaves, lightly muddled
4 Shots Ron Botran 5 yr Oro Anejo
3.5 Oz Schweppes Bitter Lemon
Fill with ice
I had 5.
Tasty. I will do the Mojitos this afternoon, and I am sure they will be better.
P.S. coconut ice cubes, you guys kill me. . .

OK, y'all got me! I'm mixing up one now. I'm going to use the Ron Botran Blanca and Vita Coco. Thanks, Forrest for the tip on the Botran Blanca, and the Gold. Sampled both last night and, for the price($14.99 for 1.75L at HiTimes), great deal, tasty rum.

Used Neisson Rhum agricole blanc, then the ESB amber today. Really like the blanc in this cocktail, it adds even more to the flavor profile. also, using Petite Canne syrup instead of simple is a great touch.

A bottled water outfit called Metro Mint makes a nice spearmint water and a lemon water.
I've dropped an ice cube each in with my vita coco cubes and... nice!

I just made one with Sugarcane juice instead of Coconut water and VX and its pretty refreshing.

That sounds refreshing forrest, but the "4 Shots" of rum might require scaling down if your shots are 1 oz or more. :D
BTW Coconut water ice cubes are now as indispensable as Ting. Of the two waters tried so far, the O.N.E. brand was decidedly fresher tasting than Zico.

Just a standard shot (1 3/4 oz) .
I would scale it if I was making it for someone else.
The cocnut water Mojito was good, I had a few.

I salute your iron constitution. Pardon my curiosity, but your recipe calls for 7 oz of rum; am I missing something? With five drinks that would total 35 oz of rum, over a quart.. That seems a good bit over the top by most cocktail standards. All three Zombie recipes from Beachbum Berry's latest have less than 5 oz of rum, even considering each 151 oz as 2 oz. Isn't the Zombie considered a pretty stiff drink?

200ml of alcohol in each drink! And you had five? That's a bottle and a half of liquor. Good work my friend!!
I might scale down the rum if I was tweaking that recipe for myself but I may have misread your scale......:)

Paul you are nothing of the sort, I just misread some lines.
You guys had me doubting myself so I went and checked the measure I used, it worked out to be 3 1/2 oz, sorry for the mis-statement.
so as a real measured recipe the drink would look like this:
10 -12 Mint Leaves muddled
3 1/2 oz Rum
3 1/2 oz Bitter Lemon
Ice
Honestly though the drink was alright, nothing special, just refreshing.

No castigation intended - it was respect for your alcohol consumption! That recipe looks good. Bitter lemon would make a good mixer to charge a mojito with.

and it is clearly marked 2 and i filled it past the 2, but even all the way to the top it is barely 2 oz, so i am a dip-ship-- i thought i was pounding a 4 shots of booze in each drink, and it was really just 4 oz...
You are right about the bitter lemon. You guys across the pond have had this readily accessible for years right? Over here we are just now seeing it become available-- and i glad to see it. It is warming up over here and long drinks/ coolers do go well in the warm.
Bitter lemon goes great with pineapple juice also, i flipped a couple of those with rummy rum rum and it was delicious-- i will work out some measures and post it later.

Bitter lemon is a real old-school drink in the UK. It's kinda considered uncool now in all the cocktail bars...associated with middle-aged ladies and working mens clubs where it's drunk with gin.

That is hilarious.
i was in NYC a few years back and my friend and i were shopping. When she saw the Schweppes Bitter lemon on the shelf she wanted all of them-- i had to carry 7(?) bottles of it to her house in Dominican Harlem (the12 flights of stairs were the toughest . . .)
That is how un-available it use to be...

i am finishing #6 of the 'ACTUAL' 4 shot drinks.
i measured my shot glass before starting and it was 1 1/2 oz -ish.
4 Shots worked out to be a tad under 6 oz (or around 175 ml)
Whatever the exactt measure this last sip i am looking at is the end of a 1 liter bottle.
The drink:
4 shots rum
1 shot Pineapple juice
1 shot Schweppes bitter lemon
with a handful of frozen grapes.

Forrest, I look up to you in more ways than one! Good work, I tip my cap to you. Where are you finding the Bitter Lemon, HiTimes? I will be scouting th the stores of liquor stores of Dallas this weekend for something new. Maybe, Railean Rum....
