View Full Version : Frozen Coconut Water

I have a friend from St Vincent, who has family that still lives there. She suggested freezing coconut water and put a small amount of the ice in a glass of neat rum. Of course, she suggested Captain Bligh Sunset Gold. She said this is common on St. Vincent, and the coconut water adds to the flavor of the rum. I have had rum and coconut water before, but never thought of using it as ice.

Freezing coconut water is the only way I know of to preserve it. Coconut water and rum is one of my favorite drinks and your friend is right Captain Bligh and coconut is a great drink.

Ron con Agua de Coco is very popular down here also. It's also mixed with Scotch or Gin.
Coconut water is sold in cans down here, although it's not bad, It doesn't hold up to the real thing.

Yes, the only way I will aquire it is in cans. I will make some small cubes and try it with different rums. What is the ratio of the usual mix that you all have seen when mixing with just the water instead of ice? A splash? 50/50?

I find this interesting and want to try it too, we also only find it in cans..

In my experience the usual mix is about a 50/50 blend. Interestingly, While the coconut from which the water is derived is chilled before opening, the drink itself is served without ice. At least by the locals here.

Yeah, we tend to get it i cans here too - a number of companies make them, Goya in particular. They generally come with little cubes/slivers of coconut in the "water".
So the idea for this (rather lovely-sounding) drink is ice cubes made of coconut 'water' in the rum? Or a measure of the liquid 'water' (chilled) in the rum?
Either way sounds fantastic...
Cheers!

If you want to "Wow" a bar...And have a source of green coconuts... Prepare a green coconut so just the very top needs to be sliced off at the last moment, preferably with a nice small machete'. Pour a small juice glass half full of rum...Then pull the coconut from the cooler, Lop of the top, Pour right from the coconut and finish the drink with a slice. Now that's Puerto Rican Ron con Agua de Coco!

You have me drooling..i must remind myself to ask Ed for a drooling smiley..
I just remember now that sometimes in the asian shop there are fresh green coconuts with the top cut but they are frozen..how do you think that would do? Better than a can though..
I want to try to make coconut water ice cubes as well. I`ll go to the asian shop tomorrow.
Then the question is what rum shall i use..

Much better than a can of water Tiare! Try it and taste for yourself...Obviously, the water is more delicate than the milk or cream of the coconut, but the flavour is distinct and adds a great deal of character to the cocktail.

Ditto on the drooling & on access to green coconuts. Sundays (& early work on Mondays) be damned...this one will have to wait until next weekend, but that does sound fantastic...
Incidentally, I've done a "similar" trick with fresh sugarcane shoots (little more labor intensive), where I'll chop them into 6~7" segments & core them out (reserving the insides) to make a tall shooter glass. Bake 'em briefly to cure & press the reserved pulp for the juice, mix it with some good dark rum (though I'd bet an agricole or cachaca would work well too), lime juice & licor 43 & pour into the sugarcane shotglasses. Call them Sugarcane-Sin Shooters & watch your friends' jaws drop.
Cheers!

Sugarcane-Sin Shooters
4 oz. Dark Rum (Goslings or a Demerara work best)
1 oz. Licor 43
2 oz. fresh Lime juce (Key Lime juice works too)
1 1/2 oz. fresh-pressed Sugarcane juice
Shake with plenty of ice & serve in Sugarcane shotglasses.
Makes about 6 (for glasses as prepared above)
Enjoy!

lime juice & licor 43
Samurai - that sure sounds good! I've been curious about Licor 43 (Cuarenta y Tres). I see it on the shelf at the store, I've seen it at some "better bars". What is this? Is there a rum base to it at all? I've only been told it has hints of vanilla and fruit (citrus) flavors? Is this true?
I've not seen a drink recipe call this out yet until I read your recipe here. What else would you use Licor 43 in? Sounds interesting.
PS - and I don't mean to "derail" the thread! Regarding the coconut water, is it common to find it packaged in metal cans or paper containers? I would think the metal cans would detract from the flavor? I've found that Dole pineapple juice from the can tastes very much like the can, which is a complete turnoff.
If you fill an ice cube tray with the coconut water, will one "standard sized cube" be sufficient for the drink, or it it too much?

I'm not sure what the base on the stuff is (considering how sweet & viscous it is it could be sugar syrup as far as I'm concerned)
I know it's pretty popular in the club scene (check out the licor43 official site - it's bloody ridiculous!), likely for those mickey-fin-sweet sort of drinks.
But all aside, it's pretty good in small amounts, as its one of those liqueurs that will comandeer a cocktail if overpoured - very pronounced sweet vanilla flavor with a sort of background (undeterminable) sweet citrus - likely lime or lemon (or some combination of the above).
When I do use it, it tends to be sparingly - it comes in ~375ml bottles as well as fifths - get the former - it'll last you quite a while..
I know what you mean on the pineapple juice/can thing, though I've never noticed a similar effect in the coconut water I've gotten. Those waxed paper/cardboard containers aught to completely eliminate the possibility though. Ditto on the ice cube query? Even though I mean to try the fresh coconut one first, how many coconut ice cubes to use for this?
Cheers!

As for the coconut icecubes i think 2 would be good in a glass of rum.

By-the-by, your (fantastic-sounding) green coconut drink can also be done in a scooped-out honeydew melon (or pineapple, personal watermelon, &c) - to which one can easily add a hollow bit of bamboo (or similar tube) as a pour spout. Fill with drink & you have a pitcher full of tastiness..
Alternately you can cut the plastic spigot off of one of those 2/5 gallon water jugs & rig it into the side of a big melon & have a watermelon "keg" full of punch :D
I had another pretty tasty drink what made good use of 43 going last summer but I'm not sure if I'd written the recipe down..I'll have to see if I have something...
But i can`t get fresh sugarcane shoots or juice here!
Those are the only places I'm able to find it - asian & indian groceries - I've just started seeing the short & really green ones now, and its usually only available through late june here :( Maybe they could order it special for you? I have in the past also seen short (~10") pieces of sugarcane in vaccum-sealed plastic packages...maybe those would be easier to get in?
Now, I've never tried doing this one with the canned sugarcane juice/nectar (which is an ok mixer for certain things) but I suppose it would work - particularly if you heated some of the water out and/or supplimented it with a bit of that petite canne syrup I keep hearing about.
In fact I'm almost positive it would work, it just may loose a touch of the grassy-fresh/liveliness that the fresh juice imparts (perhaps substituting a measure of agricole for rum would help with that?)...but it would give you a good idea of the drink at least..
Cheers & Enjoy!

And what about this one...? cool fresh coconut water and rum drunk from a honeydew melon eh? (Tiare goes to the Asian shop today..)

Update: So i went to the Asian shop and i found the canned sugarcane juice and coconut water. And with the coconut water i made that honeydew melon cocktail and scooped out the melon and poured the rum (Havana Club 3 anos) and the coconut water with a sprig of mint as garnish. It turned out to be a cool and quite refreshing drink.
Imagine then doing it with fresh coconut water..

I was really lucky to all of a sudden find fresh sugarcane sticks, so i made those sugarcane shooters. And even though it was a bit of work...it`s hands down the most exotic way i`ve ever been drinking rum!:D and so tasty!

I have found my new drink Nirvana. I have some Coconut water, bought at whole foods, and tried it with Appleton VX today. Excellent. Then I added a small twist if lime. The Coconut water is from Brazil. I made some ice cubes also. I will use those soon.
This drink may well compete with rum n ginger for first place.
OK, suggestions on what rums to mix with the Coconut water?
Also I purchased some canned Coconut Juice. What is the difference between this and coconut water? It is hard to tell from the packaging.

What a coincidence! i was going to watch a movie and opened a can of coconut water a few hours ago..and then i tried Havana Club 3 years to go with it and after that Dillon blanc. Both were nice with the addition of some ice and a sprinkle of lime juice as well. The canned coconut water here is slightly sweetened so only ice and some lime is needed.
The Coconut juice in a can is usually sweetened coconut water.
I also made one drink with muddled pineapple, JW&N overproof rum, coconut water, ice and lime. But now i have switched to Banks XM neat. That`s my "goodnight drink"..

Did you mix the coconut water with the VX in a liquid state? Or use the cubes?
If liquid, what was your ratio cw to VX? Sounds good.

That is quite a coincidence that you went for the same drink as I at the same time. A rum ESP connection.
A 50/50 mix, with a couple of small coconut water ice cubes is my ratio. Today I used St. Vincent Extra Gold, and it was even better than the VX. This drink is so delicious I can't stand it.:p
The Coconut Juice I have says that it is pure Coconut Juice, no added sweeteners. I have not compared the two yet, but when I do, I will post what I find.
This drink REALLY makes me miss:( the Islands.

I have found it is better to use large ice cubes instead of the small ones for coconut water, as it tends to melt a little faster than normal ice, Except when you just want a hint of coconut water. As the coco water melts slowly, the taste changes as you go. A very sensual way to enjoy this drink. ;) I am trying this with many rums, and they are all good. :) I find that the flavor profiles are all different, and you have to adjust the rum/coco water ratio. Nature definetly intended sugar cane and coconut to be married in this fashion. What drink could be better on a hot day in Florida? It will be a long hot summer......

That`s what i liked the most with it..
But i would recommend to leave out the little coconut flesh bits and strain the water before it go in the ice tray. When i made my cubes the coconut flesh changed a bit.

We are getting a taste of hot dry weather, but the humidity is low. Pushing 88 to 90, a good breeze blowing. I indulged in a Ti Punch with La Favorite Amber, then a lunch of grilled shrimp salad. I saw my bottle of Montecriso 12 on the shelf, poured a measure, added the coco water ice cubes and a small slice of lime. Again, it seems most rums love the coco water. Poured another, started Jimmy Buffets new book, and lit a medium bodied Camacho Select Torpedo, a great afternoon cigar. It went well with my cocktail. I love Florida, and the tropical heat that comes with it. In my earlier post I was looking to the hot summer to come, and the Ti Punches and rum and coco water that will enhance those summer days.

After reading the coconut mojito thread I found this one. Coconut cubes are a great idea. I went to the supermarket and all I could find was Foco (product of Thailand) Coconut juice which is only 80% young coconut juice and the rest is sugar/water and preservatives. Then I found Amy and Brians Coconut juice at a local co op grocery store which lists 100% all natural young coconut juice. What brands have you guys found? and has anyone found a brand like Foco that adds sugar and found that they liked it?

I buy my coco water at whole foods. It is from Brazil and comes in cartons. Seems to me that it is high quality. I have not tasted one that has added sugar, but I probably would not buy it. I would not like the added sweetness.
The brand names are Vito Coco and O.N.E.

Seabass and Hank. I'm curious as to how the Coconut water drinks you are buying off the shelf are preserved. Flash Pasteurizing, Acids, Irradiation?
The ones I've tasted from cans are Flash Pasteurized and really lose a lot in that translation.

The foco juice which is only 80% has acid in it and was out on the shelf. The Amy and brians only lists young coconut juice. Doesn't look like it has preservatives. Luckily it was in the cooler.

Both of them use the Tetra Pak- it is a special carton that can be re sealed. They both have no preservatives, no additives. They have a shelf life of 6 to 8 months, until you open them. Then the carton says refrigerate after opening, and consume within 2 days. Both are produced and packaged in Brazil.

Thanks for the packaging info guys. Tetra Packing uses UHT technology, Ultra-high temperature processing or (less often) ultra-heat treatment (both abbreviated UHT) is the partial sterilization of food by heating it for a short time, around 1-2 seconds, at a temperature exceeding 135°C (275°F), which is the temperature required to kill spores.
It allows for perishable liquid food product to be stored at room temperature for up to one year.
