View Full Version : Kaffir lime and Pandan syrup

And here are 2 new syrups i made tonight. One is made with 2 parts white sugar and 1 part light muscovado and then pandan leaf (pandanus)

I usually use it sometimes when i cook jasmine rice to make the rice fragrant. Pandan is mostly used in Asia to add fragrance to desserts and rice.It has a very special fragrance.

The other syrup is made with light muscovado and kaffir lime leaves. I used a 2:1 ratio for both syrups.
They are very distincly flavored and should be used in small quantities, just to give a hint of "something" to the drink.

Next thing is to find out what drinks would go with these syrups..

I like the idea of the pandan leaf syrup. Very interesting.

If I were you I'd have done it with palm sugar, just to get the full on SE Asian taste.

I might also have infused some coconut in it. Pandan and coconut go quite well together, though of course when you add the coconut you start detracting from the pandan.

Still pandan is quite a subtle flavor. I reckon it works best partnered with something else.

Hmm...my palmsugar is finished but i should get some new and give it a try..sounds interesting with coconut, but how would you have used the coconut, infused fresh coconut meat i suppose?

I think this pandan has a very distict flavor, when i used it in rice its very fragrant.

But pandan/palmsugar/coconut syrup sounds deliscious..

Actually I guess I may have never had pure pandan.

I have eaten it quite a bit in Malaysia and Indonesia where it is pretty common.

But always (I think) it has been used to flavor rice, in rice based cakes (i.e. the layer cakes made by pouring consecutive layers of differently dyed and flavored rice starch), or in coconut milk deserts.

Although I had it a bit I probably never had it by itself. I always imagine it partnered with something fragrant and starchy (or maybe something a little fatty).

Try it in a syrup seamus!
I just went to the fridge to check the flavor now when it has settled overnight and its soo deliscious! very very fragrant!:) the kaffir lime syrup is equally flavorful but of course very different.

The pandan syrup is especially nice in a Pina Colada and the kaffir lime syrup too.

I have yet only tried them in Pina Coladas and they go very well with coconut flavors. I know how nice pandan and kaffir is in cooking with coconut milk and likewise they do well in coconut milk drinks.
Especially the pandan syrup is nice in a Pina Colada.
