View Full Version : Suggestions for drinks with passionfruit?

There is a bag of passion fruit in my fridge. I have one drink lined up to try that uses passion fruit juice (The Avenue from one of Ted Haigh's books). I'm guessing that will only account for a couple of them though. There will be a pile left over.

Any drinks to suggest?

I never tried juicing passion fruit before but I hear they don't give a lot of juice, so nothing requiring gallons of juice please. I'm thinking Tiki drinks that contain an ounce of passion fruit juice along with other things. Anyone know of something suitable?

Please forgive the trumpet blowing but passion fruit works particularly well with the Trader Vic Mai Tai - as we've just done with our soon to be launched West Eleven Cocktails

Bunnyhugs, maybe you can make a passion fruit syrup if you have so many?
Its not like that drink i made when i found ONE passionfruit, but you have a whole bag..

Paul, this West Eleven Cocktails looks really fresh and creative, and i`m dying to try them! ;) the ideas used to twist the cocktails in combo with fresh ingredients is a winner!

Passionfruit has a wonderfully tropical flavor that goes well with many rums, and other juices. I enjoy it with a bit of pure pomegranate and a touch of cream of coconut, along with a fine white rum or cachaзa.

My second favorite drink rhum agricole drink is passion fruit, rhum agricole and a little lime, sugar cane syrup (or not) to taste.

Not for a little while I'm afraid. We'll go global eventually but gonna concentrate on cracking our own back yard first.

I'll tell you more after we launch in a few weeks.........

Ok, I have tried a few passion fruit recipes now.

First I tried some 'classical' 1920s and 1930s drinks based on recipes I found online. These were all sort of 'urban' drinks based on things like gin and bourbon.

Then I got more creative and made my own passion fruit drinks using pisco and rhum agricole.

Ed Hamilton suggested a dark rhum agricole, lime and passion fruit drink. I did not write that one up yet, but based on a couple of trials it is also really nice. For me, the special thing about it is the way the aromatic rhum agricole and passion fruit come together.

When I drank this drink in the islands we used rhum agricole blanc not rhum vieux and it was delicious.

So passionfruit juice/nectar is good, but as Tiare suggests, a syrup is a marvelous way to go - you'll concentrate the flavor a little better. Also, barring any prohibitive flavor clashes, you'd likely be able to swap in pasionfruit syrup anyplace you see simple syrup in a given recipe.

Quite possibly the best-known Tiki recipe using Passionfruit syrup is the classic Hurricane:
2 oz. Dark Rum (Goslings is particularly good here)
1 1/8 oz.Passionfruit syrup
1 oz. fresh Lemon juice
Shake well with ice & serve in a pint or hurricane glass over fresh ice.

Or a more modernized (read: complicated) Hurricane by Dale DeGroff:
1 oz. Dark Rum
1 oz. White Rum
1/2 oz. Galliano
2 oz. Passionfruit juice [or ~2 oz PF syrup & omit Simple syrup]
2 oz. fresh Orange juice
2 oz. Pineapple juice
3/4 oz. fresh Lime juice
1 oz. Simple syrup [omit if using PF syrup]
1 Dash Angostura bitters
Shake well with ice & serve in a hurricane glass over fresh ice.

I make a slight variation on Trader Vic's Tabu cocktail when I've got PF syrup on hand:
1 1/2 oz. White or Gold Rum (on preference)
3/4 scant teaspoon Superfine sugar
1 slice canned Pineapple
1/2 oz. Passionfruit syrup [normally Cranberry syrup]
1/2 oz. fresh Lemon juice
Blend briefly with one scoop of crushed ice & serve in a Champs Flute

If you've access to Trader Vic's '47 Bartender's Guide there are a number of Passionfruit drinks/ideas for its use in there. If I recall correctly its the same with the (more accessable) Beachbum Berry books.

Man. . . I could have sworn you had written rhum vieux. Now I see you didn't. Why was that in my mind?

Anyway, I tried muddling the pulp of one passion fruit with 1/2 a lime (cut into a couple of wedges), then adding sugar syrup (I used golden syrup), a pour of St. James Ambre and ice. It was very nice.

Is that more or less how you do it, but with the rhum blanc?

Passionfruit..i have one..

Agricole..i have plenty!

Lime..fridge full..

Syrup..fridge full..

A glass..YES!!

Depending on the strength of the rum I'd start with a couple of ounces of passion fruit juice, about 1 1/2 ounce 100 proof rum, a little sugar to taste and a squeeze of lime on top stirred and then add ice.

Passion fruit is a great addition to almost any rum in my estimation.

The Puree's and Pulps that are available commercially are good.

However, here in the tropics we find it cultivated everywhere.

Extracting the juice is not easy. The seed mass is very dense , and the liquid very viscous.

Down here when we have enough ripe fruits, We set our friends up with a small strainer and glass. Each one cuts open the fruit and scoops out the pulp and seeds into the strainer. And then takes a rum of choice and pours a liberal amount through the strainer to extract the juice into the appropriate vessel. Ice and a slice of local Limon finishes the drink. Sublime.

And "At Anchor" is where you'd want to be right now. The Trades are blowing at 20 to 25 knots and local waters are at 9 to 11 foot swells.

Pass that strainer please.

Hi, thanks for letting me join this excellent forum which I have already recommended to many friends that we are gradually integrating ido, I recently had an excellent experience with Healthy Juices (http://healthyjuiceguide.com) I discovered them on a trip to Costa Rica, a beautiful tropical country where they have juices drinks all day long, all year long. My favorite one I tried there was the Mango juice. For those of you who haven’t heard from it, mango is a deliciously sweet orange yellowy tropical fruit.
