The history of sugar cane and rum in Panama start with Don José Varela Blanco, a Spanish immigrant who, in 1908, built the San Isidro sugar mill close to the geographic center of the country in the town of Pesé. Depsite the importance of the sugar cane and spirits industry in Panama, every industry in Panama exists in the shadow of the Panama Canal.
